Premium bread rises in recession

Australian’s are eating less white bread, but the market for premium bread is not only growing, it also proved robust in the face of the global financial crisis.

Five years ago, John Dench and his son Tony, together with Judy Newman, set up Dench Bakers in Melbourne’s inner-city Fitzroy. They began with two other bakers besides Tony, but today they have 12 and have just extended to a shop in Hawthorn.

John Dench, a well-known Melbourne chef for 40 years, said their bread business held up well through the slump. "Our bread sales remained the same: we didn’t decrease and we didn’t increase; we flatlined," he said.
